For a short period of time Colt did make a 357 Detective Special. Perhaps it was in the early 1990's and production numbers were low. In Colt's infinite wisdom they discontinued manufacturing it. All the reviews in the gun mags were stellar.

IMR 8208 XBR is really accurate with 55 and 69 gr precision loads for me. Does great with 55 gr ball too.
I couldn't get CFE 223 to shoot as accurately as I wanted.
Those are the only two powders I've tried so far.

Deer are tougher than humans. I think I would use a 158 grain or heavier cast lead bullet. You'll get full penetration which means a decent blood trail. The Barnes 140 grain that was previously suggested sounds good too. That's the best of both worlds.
