AK's aren't accurate and I own 2 and have shot dozens more. For the money people pay for an Uzi you can get a decent AR in 9mm or a Sig MPX and have a better platform.
An Uzi is a room warmer at best. Heavy, bulky, expensive, inaccurate, won't penetrate body armor, mags are a bitch to load without a loading tool and it's heavy.
It shouldn't but removing the action and putting it back in the stock can unless you torque the screws to the same pressure as before. If they are bedded it shouldn't change at all.

All 3 would work. #2 you would need a gas block height front sight. #3 will be the hardest to find but they are out there. I have a set by YHM made for the Bushmaster ORC rifles but aren't made any more. They fit over a cut down A2 sight but can be clamped further out on the barrel if you wanted.
I would say get a few boxes of different Bullet weights and brands to see what shoots best. Obviously reloading your own would be your best bet. Cool little caliber.
