At 65 my wife and I go to gym on a MWF schedule. We need a day in between and the weekend to recover.
At 75 with that schedule you have my respect.

I’ve finally gotten back to running consistently. Started back in February at 4 days a week. A few weeks into that a friend asked if I wanted to run a relay race with them; 77 miles around Seneca Lake, so I’ve upped my training to 5 days a week.
Between that and my wife losing her job (cutting way back on snacking because I’m pinching Pennie’s as best we can), I’m currently down about 5 lbs and resting heart rate is dropping. Outside of muscle soreness, I sure feel a lot better than I did 4 months ago.

As a senior, I've gone to whole body routines since it seems to be the most straight forward way I can hit each body part at least 2 times a week.
When I lift too late in the day or don't get enough rest time between lifting days, it's not my muscles, joints, or connective tissue that don't recover, it's my nervous system. If I lift late in the day or shorten recovery days my night time heart rate variability at night drops, night time heart rate goes higher, my beat to beat interval drops and I get less deep sleep as well as REM sleep.
As I approach 73 I've seen better gains (yeah, old shits can still gain muscle mass and strength) with 48 to 72 hours between resistance training sessions.
So do you guys count it as an off day when you haul a couple tons of soil / rocks / mulch, dig a shit load of holes, or down some trees and split some wood? Asking for a friend so he can discuss it with his wife.

3 days is just fine for all ages assuming you don't have a health issue where your doctor is saying not to lift. 3 day whole body is super effective, young, old, doesn't matter. Proper effort and progressive overload matters. Keep after it, before I started working out at home I always liked seeing the older crowd come in. Too few people actually take care of their health.

Lucy Milgrim pulled 180 lbs at just 9 years old at the Arnold. some adults are about to watch this and quietly delete their gym membership.
